just wanted to know if anyone out there ever burnt, or nearly burnt their frying pans

i usually leave my frying pan with the heat on high for about 3 min to let the oil warm up

this time around, i fucking forgot about it and came back after about 8 minutes.... the oil was steaming.

the pan isn't burnt per se, but there's a *slight* discoloration on teh surface of the NON STICK pan.

i don't think the pan is ruined... but it is slightly discolored.

should i just eat the stir fry? i mean it tastes okay... and i am hungry enough.

i just don't want to get cancer and die from it. should i just get a new frying pan?

the oil was just steaming, not burnt at all...

plz help me.

well, simply throwing out your teflon pans will not help. teflon contamination is like air pollution.. it's all around you. we all have small traces of teflon contamination in our blood.

i think iron pans are generally salvagable.

it's the teflon motherfuckers that are fucked if you fuck em up.

in general, i get the feeling most pple here are anti-teflon pro-iron.

i'm beginning to see the error of my ways.

iron is definitely preferred when cooking certain foods. iron holds the heat much longer and provides consistent temperatures.

what do professional chefs use? stainless steel?

i am a total neophyte so fill me in homiez

i take it there are 2 categories bsically:

- teflon

- everything that's non-teflon (iron, aluminum, etc.)

that said, what is the easier for beginners like me?

get one of those expensive aluminum all-clad frying pans. amazon.com had one on sale. i think it was a 7.5" for $20. its kind of small but that price is a steal.

The ceramic-titanium literally anchors itself in the aluminum surface and becomes one with the pan.

they're non-stick [but not teflonated] and you can use metal utensils without scratching them.

that Jamie Oliver commercial for his t-fal line of pans is RETARDED. Oooooh, he's all hipstered out in the kitchen w/ his chuck taylors jumping all around buzzing to matrix esque electronic music. URGH!

I actually don't mind his tv shows though.....but that commercial has got to go.

to be safe, you should never put oil in a cold pan and leave it to heat up. it's guaranteed at some point you will forget about it and start a grease fire or scorch your pan as you did. always heat the pan first and then add the oil. it will only take several seconds for the oil to get hot in a heated pan. this also prevents from overheating your oil

I left the burner on w/ my teapot a while back. The thing's permanently discoloured now, but it still functions just fine.

thank you. i will heed this advice. i also don't think i'm ever going to use teflon pans again.

If you have the coin, pick up a Le Creuset 10" pan.

If not, buy a Lodge for $20 and treat it well.

Stainless steel is a good choice if you are prone to cookware abuse. Like all tools, if you are going to use it more than a few times, buy the very best you can afford.

non-stick is good for omlettes, but I dunno what else.

I bought a set of pots and pans for $400, but non-stick and they have tiny ridges on the bottom. I kick myself now, but can't really toss them for new ones yet.
