best way to achieve maximum ripeness anyone? if I leave them out they'll get dry, if I leave them in the fridge they'll stay hard and crunchy. so what's the best way to achiever perfect ripeness?

i wash mine when i get them home and leave them in a colander to dry out, *place a paper towel on the bottom of them*, i let them sit over night.

washing them and letting them sit in the sun helps to. just keep an eye on them, because even a widow sill does the trick fast!

Do not, by any means, put peaches in the fridge. You'll waste all that sweetness.

Japanese peaches are the best, and they're almost twice the size of US peaches.

1) get a couple of hard peaches.

2) get a regular apple.

3) cut the apple in half.

4) place it in a brown paper bag with the other peaches.


the cut up apple releases a gas called ethylene that encourages ripening in fruits.


in fact if i recall correctly this is how peaches (and many fruits) are shipped to the supermarket. they're picked when they're hard and then they're shipped to a distribution center where they're doused with ethylene. from there they go to the supermarket.

Time to buy a box of white peaches.

I do like the crispy/crunchy 'baek do' variety too. The sweetness and flavor of soft white peach, but it snaps and cracks like a radish.
