so fried rice or chow mein? anyone else sick of these tired ass choices when it comes to pickin' a "side dish" to accompany your entree at a fast food chinese place?..this sux...(and yes i'm talking about that nasty panda place!!).

I'm sorry I'm not a genius in everything like you. By the way, 'How stupid' should be followed by a question mark, you know, that curvy little thingy that actually has a point.
Anyhoo, back to the topic, the most crucial ingredients for my fried rice is minced ginger, chopped green onion, and sesame oil. The problem with cheap chinese food fried rice is that they had to tweak the recipe to include only those ingredients that can sit under a heat lamp and not turn gross, which greatly limited their creativity.
What I really hate about the chow mein is how they throw in massive amount of cabbage. Damn, if I wanted cabbage, I'll order them, I want chow mein, fuckers. In fact, I have never ordered chow mein in fast food joints.

this is kinda on the chow mein tip, cabbage and all...i got some curry shrimp the other week and i swear they put a whole fucking onion in my little pint of dinner. i was like, damn! i wanted some fucking shrimp w/my onion yo!

Even though fried rice is recycled food like bread pudding, I like it. But I am not eating it from any Chinese fast food place. Its gotta be fresh from the restaurant.
Have to second the comment on Hong Kong food. Really good.

someone mentioned getttin' a whole damn onion in some chinese food dish that they ordered,and that's happened to me to! It sux to pay for any food (expensive or not) and have it taste like shit - a lot of places where i live have no fucking idea what is up!! and unfortunately most are just fast food chinese take out..not the high quality or variety that some cities have...some fried rice is completely "recycled" - i was whining in this post - but sometimes as a scorpio that's necessary...oh and with 2 kids to take care of i have little time to make that shit myself - don't judge - props to the people that understand...oh and fuck that little panda bastard!!!

yeah..see thats the problem with the fast food joints......they dont actually try to make chow mein or fried rice that tastes good....they just make it cheap and greasy.....i will never get tired of good fried rice with like egg and green onion and char siu and shrimp and chicken....thats the stuff......chow mein...ive never really liked anyway.....i do like singapore style noodles though.....

actually, you are better off eating chinese fried rice from a fast food place. many joints that offer eat-in fare almost always use the leftover white rice from people's plates for other people's fried rice. this is not a rumor, either. i spent 8 years working in the restaurant business, i have seen too much fucked up shit. you can tell by the way that they clear off the tables - the ones that are extra careful when clearing away people's rice bowls are the guilty parties.

unfortunately, it doesn't only happen at cheap restaurants. i was at a very nice chinese restaurant in princeton and i spotted it going on right away. gross things happen in every restaurant.
but you can never go wrong by following solip's lead and being nice to people in restaurants. here are some basic tips to keep your food clean when eating out (this especially applies to asian restaurants i think, but i have never worked in a non-asian one so maybe someone else could confirm):
- never try to be seated at 10:05 when a restaurant closes at 10:00. the hostess may be willing to seat you b/c she will then make another tip. but the chefs will be pissed as hell, especially if they have already started to close up, and can do nasty things to your food.
- never piss off or yell at the waitstaff unless it is really necessary. they could spit in your drink (been there, done that) or worse.
- in an asian restaurant, never send your food back, unless they bring you the wrong dish. if you absolutely must do it, don't do it more than once. you will get FUUUUUUUUCT without a doubt. better to pick off someone else's plate and never come back.
i don't mean to scare anyone. just lookin' out for y'alls.

you know what...people should do that ANYWAY, i mean be courteous....i guess because ive worked in the restaurant business for most of my life i know how the rules work....most people dont.....
but even if you dont know the rules.....you shouldnt have to be afraid to go out to eat.....i dont understand what makes people think that they can act like animals....be unclean, be cheap,do horrible things to food, or act like royal bitches when you go into a restaurant just because they have like a vendetta against the consumer population as a whole....it makes me mad...and sick.....
i once saw this undercover video where they showed this chef with long hair tied back accidently get his ponytail in this huge pot of soup.....he then proceeded to WRING HIS HAIR OUT BACK INTO THE SOUP!!!!!! & i know thats not the worst thing to happen...ive heard about people peeing, spitting, ejaculating, even putting crap in peoples food...i just dont understand the mentality.....and its not always out of revenge....a lot of times its because theyre just assholes...

Peruvian restaurants also have good fried rice. Fried rice is a staple in Peru, thanks to the Japanese immigrants.
They put french fries on the rice and put gravy on top. Yum.

(great tip on the cleaning up the tables).i know that even "nice places" can get down and funky, so looks don't always count when it comes to dining out.... i also agree with someones post regarding etiquette - i always practice the courtesy thing - never know when karma plans on bittin' you in the ass...after reading all the suggestions to make it yourself - i finally will..

yeah, angora - i hear ya on that one. especially in the asian restaurant business, i have noticed a lot of restaurant workers are bitter and think that they yield some sort of power by pulling such crap.
dragon, sorry that you had to learn about the rice thing the hard way. its really, really gross, but it won't kill you. just remember for next time.
i ate peruvian food for the first time last friday. a bisteca topped with fried egg, with fried bananas and rice on the side. YUM!

day old rice from your own rice cooker
garlic, green onions, regular white onions (?), and ginger for flavor
3 eggs
sweet chinese sausage
soy sauce and maybe oyster sauce for flavor, also, a little sesame oil
the chinese sweet sausage is pretty key. also, after you flavor the cooking oil with the garlic, ginger and onions, scramble the eggs in a bowl and cook it omelette style (pushing the veggies to the side of the wok). onceyou have an omlette, break it into pieces, frie the sausage, add the rice, fry, then add the sauces. well, that's what i like to do.
or you could just cook the sausages first and get the oil from there.
i've been eating this a lot since ive retired.

Our methods are almost identical!! I always use oyster sause; and to make it richer in texture, I somtimes add pine nuts for the surprise crunch every now and then. Hmmmm, Yumm.

take old, sour kimchi, chop it up and fry (with meat if so inclinced). add your rice and continue frying. take some juice from the kimchi and add to rice until it's incorporated, but not so much that you end up with mushy rice. dash a little sesame oil, add chopped green onion, and mix. serve with an egg sheet on top. enjoy cheap, quick meal.

use your wok for 5 days straight, clean it up but dont scrub out the sauce and oils from cooking. then, when its late at night and youve been on gr every night for a week and you feel the need for a snack, heat up the wok, let all those oils and sauces liquify together, cut up some garlic and ginger, fry it, then just stick the rice on top. put something over the wok, set the flame on low, and let the rice soak up all the flavor. mmm, good, i just did that just now.

the oils don't get rotten. you guys dont save your oil? if you ever eat at a restaurant and having something fried, chances are that that food was fried in oil that fried something else before your meal.
it sounds gross, but the build up of flavor is really good. for example, you ever notice how food with sauce in it, say pasta or pancit or chow mein or something, tastes a lot better 2 days after you've cooked it? its because it's soaked up the sauce and oil more. or marinades for example, that's the whole idea, to let food sit for a while and absorb more flavor.
but it's probably not up to fda standards.

My mom usually throw a few in the rice cooker just before the rice is done. They just needed to be heated up and the steaming make them softer and easier to eat.

My routine goes like this:
Night One: throw in two sausages with the rice in the cooker. Eat one, save leftover rice and 1 sausage.
Night Two: Chop leftover sausage into microscopic disks and fry leftover rice with leftover sausage! Yahoo!

Better yet, blanch the vegetables in your sauce pan with some sesame seed oil before you add your ramen in the sauce pan. If you are also using the seasoning packet you can add it to the boiling water after the vegetables. Always add your cooked meat last. Its a double cooking technique.

I have to have rice with my Asian foods, because I really enoy how it tastes with all the sauces etc.
Not really big on FF fried rice, hate that frozen carrot and pea mix, even worse if it's the kind with lima beans!! But it's tolerable if you get something with some decent sauce on it.
Everybody thinks my Moms and my Sisters fried rice is the best, I'm gonna coopt some of the recipes here and blow them out of the water!! Thanx gang!

Boil 'em, steam 'em, chop 'em up into tiny little pieces and mix into the dish you would be cooking anyway, marinate overnight...
There's a million things that can be done with them. :D
Seasoning a wok is important. When you buy a new wok, you should season it with oil for at least a couple hours before using it.
As for the re-use of Oil... I know that at Burger King, we never changed the oil, just scooped out the floating bits :p
Oddly, the all-night restaurant I worked at never recycled food.

Yeah, I was wondering about the measurements when I was making it, but decided to give it a go anyway. Along the way, I added alittle gochujang as well to make it more spicy. But the sesame oil really brings out more flavour. Good stuff.
